Cherry Almond Granola

Granola adds the perfect sweet crunch to yogurt for a healthy and satisfying breakfast or snack.  Almonds are my favorite nut, so I keep them whole, but use slivered, sliced, or whatever you like here.  Keep milled flax seed and wheat germ on hand to add some extra healthy-oomph to a variety of dishes like oatmeal, pancakes, muffins and granola!

Granola is so easy to make.  Basically you toss all the dry ingredients into a bowl.

Mix the wet ingredients a bit, then dump on the dry ingredients.  Stir all together until evenly mixed.

Spread it out on a lined sheet pan, bake it, stirring a couple times during baking, then allow it to cool.

Cherry Almond Granola

1 1/2 cups rolled oats (not quick cooking oats)
1/4 cup wheat germ
2 Tbsp milled flax seed
1 cup almonds, whole, sliced, or chopped
1 tsp almond extract
1/4 cup dried cherries, chopped
1/4 cup brown sugar
1/4 cup honey
1/4 cup oil

Mix all ingredients together until well combined.  Line a baking sheet with parchment or a baking mat and bake at 325 degrees for about 25 minutes, stirring after 10 and 20 minutes.  Do not over-brown!!  Cool completely before storing in airtight container.  Granola will crisp up when cooled.

*This is a half batch of my normal granola recipes, so baking time is slightly shorter.

Try this on cherry or raspberry yogurt.  The flavor combination with the almonds and almond flavoring, tart dried cherries and sweet granola is great!
