Grilled Chicken with Bruschetta Pasta




Summer on a plate.  That's what this should be called!  My favorite, favorite summer dish, Bruschetta, with garden fresh tomatoes and basil makes a wonderful pasta sauce.  


Get out your favorite grilling seasoning for chicken breasts, cook you favorite pasta and spoon on the Bruschetta.  Super easy, perfect for summer.  It's a deliciously light meal to serve right before you pull out the Blueberry Cheesecake Pie I shared with you the other day!


Grilled Chicken with Bruschetta Pasta

4 skinless, boneless chicken breasts, seasoned to taste, grilled


8 ounces pasta, cooked al dente, dressed in olive oil, Parmesan cheese, salt and pepper some chopped fresh basil


1 recipe Bruschetta ~ below:




Bruschetta:
2 cloves garlic, minced fine
1/2 medium red onion, chopped fine
2 Tbsp olive oil
4 Tbsp balsamic vinegar
1/4 tsp each salt and pepper
1 1/2-2 cups garden fresh tomatoes, seeded, chopped
1/2 cup fresh basil leaves, chopped

Chop and combine all ingredients.  Let rest 10 minutes for flavors to combine.
