Tortilla Roll-Ups are a fun addition to any barbecue or potluck gathering. Mix up the flavors by using your favorite deli meat, vegies and cheese. I prefer using larger tortillas (burrito size) so I don't have to assemble as many, but any size works fine.
Begin by finely chopping red peppers, black olives and green onion. Spread thinly a layer of chive and onion cream cheese on the tortilla and top with pepper, olive and onion. Sprinkle that lightly with garlic powder and (if you plan to add baby spinach leaves, drizzle the Ranch dressing on here).

Add a layer of turkey...
..followed by spinach. For some reason I kept forgetting the dressing and added it after the spinach leaves. The dressing will make the leaves turn soggy faster if you make these a day or so ahead, so don't be like me. Put the dressing on before the cheese:) If you plan to serve these later on in the day, the dressing's location won't matter.
Roll and secure by wrapping plastic wrap around it before refrigerating several hours. Roll-Ups slice best when allowed to chill for a bit.
Enjoy!! (We were leaving for a trip and I had to cut into one. You can see how the tortilla frayed a bit, but if you wrap them tightly in plastic then refrigerate, this won't happen. They still taste great though!)

large tortillas
8 ounces finely shredded cheddar cheese
1 red bell pepper
green onion
black olives
Ranch dressing
garlic powder
baby spinach leaves
chive and onion cream cheese
Layer on tortillas in order:
Cream cheese, finely chopped pepper, onions and black olives. Sprinkle lightly with garlic powder. Drizzle lightly with Ranch dressing, followed by cheese. Top with thinly sliced turkey and then baby spinach leaves. Roll tightly, wrap in plastic. Refrigerate for a few hours until ready to serve. Slice to desired thickness.
